Cheese & Herb Scones

Based on the Edmonds basic scone recipe.

Method Overview

  1. Rub butter into dry ingredients
  2. Add milk until ingredients just start to bind
  3. Knead together
  4. Pat out dough and cut into pieces

Ingredients (makes about 12 scones)

  1. 250g (2c) flour
  2. 6 tsp baking powder
  3. ½ tsp salt
  4. 75g butter
  5. 100g (1c) grated cheese
  6. 1 tbsp mixed herbs
  7. [½ tsp chilli powder]
  8. about 150 ml (⅔ c) milk

Method

  1. Cut butter into small pieces and rub into the dry ingredients (including cheese).
  2. Add milk while mixing with a knife until the mixture just starts to bind together.
  3. Knead the mixture and pat out into a flat rectangle or circle about 3-4 cm high.
  4. Cut or break into pieces about the size of a large egg.
  5. Bake for 12 minutes at 220 °C.
