Cheese & Herb Scones
Based on the Edmonds basic scone recipe.
Method Overview
- Rub butter into dry ingredients
- Add milk until ingredients just start to bind
- Knead together
- Pat out dough and cut into pieces
Ingredients (makes about 12 scones)
- 250g (2c) flour
- 6 tsp baking powder
- ½ tsp salt
- 75g butter
- 100g (1c) grated cheese
- 1 tbsp mixed herbs
- [½ tsp chilli powder]
- about 150 ml (⅔ c) milk
Notes
- Using softened (but not melted) butter is not strictly necessary, but does help for crumbling the dry ingredients
- Add milk slowly until it just starts to clump, then knead. If it's still too crumbly, add a little more milk, about 1 tbsp at a time.
Preparation
- Preheat the oven to 220 °C
Method
- Cut butter into small pieces and rub into the dry ingredients (including cheese).
- Add milk while mixing with a knife until the mixture just starts to bind together.
- Knead the mixture and pat out into a flat rectangle or circle about 3-4 cm high.
- Cut or break into pieces about the size of a large egg.
- Bake for 12 minutes at 220 °C.
