Chocolate Fudge Pudding
This recipe is derived from the fudge pudding recipe from an NZ Rally recipe cookbook from the 1980s.
Method Overview
- Mix dry ingredients for base
- Add milk and butter to make a thick cake paste
- Coat with mixed dry ingredients for sauce
- Add boiling water
- Heat in an oven for about 40 minutes
Ingredients (Base)
- 1 cup flour (150g)
- 1 dessertspoon cocoa
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¾ cup sugar (150g)
- 2 tablespoons melted butter (20g)
- ½ cup milk (125ml)
Ingredients (Topping)
- ¾ cup brown sugar (175g)
- 2 dessertspoon cocoa (7g)
- 2 cups boiling water (250g)
Serves about 5 people.
Method
- Preheat oven to 170 °C
- Mix flour, cocoa, baking powder, salt and sugar together
- Add the milk and mix to form a thick paste
- Add the melted butter and mix together
- Pour into a ~2L oven dish
- Mix brown sugar and cocoa together
- Sprinkle brown sugar mixture over the base mixture
- Pour boiling water over the brown sugar mixture, using the back of a spoon to reduce local water pockets
- Bake uncovered in the 170 °C preheated oven for 40 minutes, until the pudding has just reached the peak of its rising
Notes
- The butter can alternatively be melted in the milk to distribute it through the mixture
